Shrikal's Grilled Lamb Cutlets in Melon Creme Sauce with Arborio Rice

Ingredients: 5 x Lamb Cutlets  80g Arborio Rice 1x Rock Melon 300ml Cream Rocket Method: Grill lamb Cutlets 3 mins each side (or to your preference) & cook the arborio rice. Peel and Grate the rock melon add to cream and bring to a slow simmer. Simmer for 5 mins. Plate up:  1. Arborio rice 2. Lamb Cutlets 3. Melon Creme Sauce 4. Garnish with Rocket

Wendy's Honeyed Lamb

Ingredients: Lamb Leg or Shoulder Roast Lamb about 1.5 - 2 kg 1 tsp ground ginger 300 ml cider or white wine or rose wine 2 tablespoons honey 2 tablespoons chopped fresh rosemary or 2 tsp dried rosemary Salt and Ground Pepper   Method: Place lamb in a roasting dish, rub salt pepper rosemary and ginger all over. Spoon honey over and pour cider/wine around the meat.  180 deg C for 30 minutes then 170 deg C for the rest of the time, 20 minutes per 500g. Baste occasionally and add more cider/wine as needed. Make gravy from the juices as usual and serve with potatoes and leeks or peas.

Lorianne's Beef Vindaloo

Ingredients: 1kg Blade Steak 2 tsp salt   Marinade: 1 level tsp turmeric 1 heaped tsp mustard 1 heaped tsp curry powder (Lorianne uses Vencat) 1 heaped tsp finely chopped fresh ginger 2 cloves garlic, crushed 2 heaped tsp hot* vindaloo paste (You can use medium if you wish)  4-6 tsp white vinegar   To Cook the Meat: 2 TBS safflower oil (Lorianne uses Azalea Oil) 2 onions, chopped 2 dessert spoons of ground coriander 2 dessert spoons of ground cumin 1 x 840g tin peeled tomatoes [or equivalent number of cans for 840g] 2 large potatoes peeled, cut into bite size pieces [I use Agria] 2 cups water 1 cup peas   Garnish: fresh coriander leaves   Method: Trim the fat from...

Lorraine's Lamb Fillets with Coffee Casserole

Ingredients: 1 1/2kg Lamb fillets (Lorriane says that you could use boned shoulder or leg)  2 tbsp Butter 1 tbsp Olive Oil 1 Large Onion, finely chopped 3 - 4 Large Carrots, peeled and sliced in rings 1 - 2 tsp Sugar 1/4 to 1/3 Pint Beef Stock [120ml/175ml] 1/2 [260ml] pint freshly made STRONG coffee (Lorraine uses Nestle Intense Instant) 6 - 8 tbsp cream Cornflour (Use if needed to thicken)    Method:  Cut lamb fillets into 1 inch/4cm cubes, discarding any fat or gristle Heat the butter and olive oil in a heavy casserole, then add onion, and saute until soft and very lightly browned. Sreejith's Southern Indian Beef with Lemon Grass Infusion

500 Grams of Beef (Sreejith recommends Rump Steak)  1 Red Onion (sliced and diced) 1 Chilli, green or red 6 Cloves of Garlic (minced) 1 inch of Ginger (minced) 1 tablespoon brown sugar (any sugar will do but brown is preferred) Curry Leaves (1 spring, will be like 10-15 leaves) Lemon Grass - Half Stalk (minced, Half a stalk is about 10 cm and take off the woody outer layer) Turmeric - 1 tsp Chilli powder - 2 tsp (don't be a wuss, it's not that spicy) Curry Powder (get the mild kind if you can't deal with spicy heat) - 2 tsp Coconut Oil (2 tablespoons, 4 tablespoons if you want more "sauce") Salt & Pepper to taste Coriander...
