Jo-anne's Easy Asian Style Caramelised Mince
Ingredients:
2 Tbsp oil
1 onion finely chopped
1 large carrot finely diced
2 cloves garlic finely chopped
1 Tbsp fresh ginger grated
500g pork mince or beef mince
5 Tbsp brown sugar
2 Tbsp fish sauce
1 head broccoli chopped into florets and lightly steamed (I steam over the rice as it cooks)
1/2 cup of coriander leaves chopped
Cooked basmati or Jasmine rice to serve
Optional: Spring onion and fresh chilli finely sliced to garnish
Method:
Heat oil in large frypan and brown onion and carrot on medium heat with garlic until soft. Add ginger and pork mince breaking up any lumps with the back of a wooden spoon until it is cooked through. Add sugar and fish sauce and stir, then allow to caramelise stirring every 2-5 mins depending on how much you would like the meat caramelised.
Mix in the steamed broccoli and sprinkle over the coriander leaves.
Serve over rice. I recommend serving with Asian slaw.
Serve 4-6 easily.
