Sarah's Ham, Leek & Vegetable Pie


500gm Ham steaks, diced

4x eggs, boiled 

1x Leek 

1 cup grated pumpkin & carrot

1 cup peas 

Couple of potatoes for mashed potato topping 

2 1/2 cups vegetable stock 



Grated cheese to top the potato. 



Boil eggs and boil potatoes for mashing. In a pan cook leeks, pumpkin and carrots until soft, add ham and peas. Season with salt and pepper. Add butter to the pan, melt, add flour to form a roux. Add vegetable stock slowly until reaches a thick consistency. Pour ham and vegetable mixture into an ovenproof dish. Cut boiled eggs into 1/4’s and add throughout the mixture. Mash the potato and top the ham and vegetable mixture. Sprinkle with cheese. Cook until golden brown!
